Short And Sweet. Chocolate Chip Cookie Dough Brownies.

If you have recovered from yesterday’s Outrageous Oreo-Stuffed Chocolate Chip Cookies, you may want to move onto these super easy brownies.

This recipe for Chocolate Chip Cookie Dough Brownies is easier than the one I posted here. All you have to do is prepare boxed brownies and a ready mix of chocolate chip cookie dough. Bake, cover in ganache and you’ve got yourself a very sweet treat.

You may want to do some exercise in between servings, though. Haha at this silly dinosaur.

Chocolate Chip Cookie Dough Brownies

Ingredients:

1 box brownie mix (I used Betty Crocker Supreme (18.4 oz size), the one with enclosed chocolate pouch)
1 pouch (17.5 oz) Chocolate Chip Cookie Mix
Ganache (recipe follows)

Directions:

1. Preheat oven to 350℉. Grease the bottom only of a 9 x 13″ pan.

2. Prepare the brownie mix as directed. Pour into prepared pan. Set aside.

3. Prepare the cookie dough as directed.

4. Drop the cookie dough by rounded tablespoons onto the brownie batter and press down slightly.

5. Bake for 35-40 minutes, until a toothpick comes out almost clean. Cool completely on a wire rack.

Ganache

Ingredients:

12 oz semisweet chocolate (chopped or chocolate chips)
3/4 cup heavy cream
6 Tbs butter
1/2 tsp vanilla

Directions:

1. Heat the cream and butter just until it begins to simmer. Pour over the chopped chocolate. Let sit 5 minutes, then stir until smooth. Stir in the vanilla.

2. Pour the ganache over the cooled brownies, spread and let stand until the ganache has set. Cut and serve.

Music time.

Here we go with a short song.

What Makes Him Act So Bad is such a cool song. Toe tapping cannot be avoided.

I love Adam Green’s sort of Lou Reed/Bill Callahan voice.
Adam Green-What Makes Him Act So Bad

For a sweet song: My Beautiful Friend.

“O My Beautiful Friend
Let me sleep and I will feed you when you’re hungry
Forever live inside of me
Thru the holes in the pockets of my clothes
High as high as an angel
I will stand there beside you
Love is all we need”

See? Very Sweet.

Outrageous Oreo-Stuffed Chocolate Chip Cookies. Outrageously Good Song From Lil Daggers.

I’ve got this huge stack of recently made recipes in my “Must Share Soon” pile.

You WANT those recipes!

Let’s start with this over the top cookie recipe. They are like edible sport balls of goodness.

You’ve got to love this sport ball. Too funny.

Oreo-Stuffed Chocolate Chip Cookies

Ingredients:

1 cup unsalted butter, softened
3/4 cup light brown sugar, packed
1 cup granulated sugar
2 large eggs
1 Tablespoon pure vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz chocolate chips
16 Oreo Cookies

Directions:

1. Preheat oven to 350 degrees F. With an electric mixer, cream butter and sugars until well combined. Add in eggs and vanilla.

2. In a separate bowl, whisk together the flour, salt and baking soda. Add flour mixture to butter mixture in 3 additions until just combined. Stir in chocolate chips.

3. Using a cookie scoop, take one scoop of cookie dough and place it on top of an Oreo in your palm. Take another scoop of dough and place it on the bottom of the Oreo. Seal the edges together by pressing and cupping in your hand until the Oreo is enclosed with dough.

4. Place onto a parchment lined baking sheet and bake 9-13 minutes or until golden. Let cool for 5 minutes before transferring to a wire rack to cool completely.

Makes about 16 ginormous balls of wicked good cookies

Recipe from Playing House

As with the recipes, I have a very tall stack of music that I want to share with you soon.

Well, I got this song by Lil Daggers yesterday and it made it right to the top of the stack. I have seriously not stopped listening to it since.

The delicious opening guitars, the swaggering beat, the “Oooh, Oooh, Oooh”s. This song has it all.

I immediately wanted to put on sunglasses, hop into a convertible, jack this song to ’11’ and just drive. Fast.

Lil Daggers-Dead Golden Girls

The Lil Daggers’ album is the last release this year on Song, By Toad Records. Described as “a dark, sulky, scuzzy record, with elements of psych-rock, garage and old fashioned rock ‘n’ roll” I guarantee it will jockey for first place with your beloved copy of “Do They Know It’s Christmas?” on the old record player.

Buy Lil Daggers’ here. Read more about the band on their Website (Wow…not really so sure about that header photo. Might not be the right time to ask if that person wants a cookie) and on Facebook.

Spicy Meatloaf With Spicy Cumin Fries

This video (as usual) has absolutely nothing to do with the recipe or anything, in fact.

I just remember seeing it a long time ago and thinking it was totally, freakin’ weird. And funny.

If you like meatloaf, this is a delicious version. Comfort food with a hit of spiciness. The cumin fries were a nice side.

Spicy Meatloaf With Spicy Cumin Fries

Spicy Meatloaf

Ingredients:

2 lbs ground beef
1/4 cup chopped onion
1/4 cup horseradish
1 tsp mustard
1 tsp salt
1/8 tsp pepper
2 eggs, beaten
1/2 cup ketchup

Directions:

1. Preheat oven to 350℉.

2. Combine all ingredients except ketchup. Mix thoroughly.

3. Spread ketchup in the bottom of a 9x5x3 inch loaf pan. Top with meat mixture. Top with more ketchup if desired (Yes, this is desired).

4. Bake 1 hour. Let stand 5 minutes.

Serves 8

Recipe from Lyme’s Library Of Recipes Cookbook

Spicy Cumin Fries

Ingredients:

2 pounds frozen crinkle-cut french fries
1/2 cup chopped dried red chiles, such as cayenne or arbol
1/4 cup vegetable oil
2 tablespoons whole cumin seeds
1 tablespoon Sichuan peppercorns
Kosher salt
4 green onions, chopped

Directions:

1. Position racks in the upper and lower thirds of the oven and preheat to 450℉. Line 2 rimmed baking sheets with foil, then divide the fries between them. Bake, tossing once or twice, until crisp and golden brown, 30 to 45 minutes. Transfer to a large bowl.

2. Place the chiles in a bowl, cover with a plate and shake to release the seeds. Take out the chiles, leaving the seeds behind.

3. Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds, peppercorns, chopped chiles and 1 teaspoon salt and cook, stirring, until toasted, 2 to 3 minutes. Stir in the green onions and remove from the heat.

4. Toss the fries with the spiced oil and season with salt.

Serves 4

I heard this song over at Play That Song For Me the other day and have not been able to get it out of my mind.

Dreamy, retro, altogether addictive.

Recipe from BBC Good Food Magazine

This song has dissolved me into pools of musical sadness. The type of sadness that makes me happy.

Just look at the lyrics. Catch the wall of sound that hits you hard.

Then really listen to the song.

Only in my dreams.

Don’t wake me up.

Sigh.

“The first drop of rain.
I’d love to see it hit your face.
And the way you look at me.
Well oh I had it sweet.
But only in my dreams.

Lazy Sunday afternoon.
I take you to a sad movie.
If I snuck in some booze.
Well you wouldn’t talk to me.
But only in my dreams.

Just when it’s feeling like it’s real love.
That’s when I know that I’m waking up.
I’m waking up.

And I could kiss your mouth.
Open my eyes and see you smile.
We could take a walk.
On a summer day in the park.
But only in my dreams.

And then you lay your head on me.
When we’ve had too much to drink.
And I try to keep you up.
But you begged me to take you home
But only in my dreams.

Just when it’s feeling like its real love.
That’s when I know that I’m waking up.
Don’t wake me up.
Just when it’s feeling like it’s real love.
That’s when I know that I’m waking up.
Don’t wake me up.

The first drop of rain.
I’d love to see it hit your face.
And the way you look at me.
Well oh I had it sweet.
But only in my dreams.”

Zebra Icebox Cake In A Jar. Sugar And Spice Nuts.

As you know, I saw Tim Noyes and Carbon Leaf in concert last night.

Fantastic.

Tim Noyes performed a solo set that was sheer magic. His smooth voice, soft guitar and mesmerizing lyrics made for an incredible show. I wish that he could have played longer.

Interesting tid bit that I learned…The song No Excuses from the album ‘Candymaker’ was featured in Episode 117 of the popular teen show “Pretty Little Liars”. Tim said that the rest of the band refuses to play it in concert now so he likes to play it when he is solo. Ha!

Here are the rest of the recipes that I included in the packet of treats that I prepared for Tim.

Definitely make these Zebra Cakes. The recipe is ridiculously easy. If you like Cool Whip and chocolate then it has your name written all over it.

Zebra Icebox Cake In A Jar

Ingredients:

Cool Whip
Nabisco Famous Chocolate Wafers
Mason jars

Directions:

1. Layer Cool Whip and chocolate wafers in jars. Refrigerate overnight.

Here’s the Zebra Ice Box Cake with the Cheesecakes In A Jar from yesterday’s post.

These nuts are really terrific. I especially loved the addition of the dried cranberries.

If you are nuts about some singer out there, make these.

Sugar And Spice Nuts

Ingredients:

1 cup cashews
1 cup pecan halves (I used almonds)
1 cup dry roasted peanuts (I used Macadamia Nuts)
1 egg white, beaten slightly
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon (I omitted)
1/4 teaspoon ground red pepper
1/2 cup dried cranberries

Directions:

1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.

2. In a large bowl, combine nuts. Add egg white and toss to coat evenly.

3. In a small bowl, combine sugar and ground red pepper; mix well then add to nut mixture. Stir until nuts are well coated then spread nuts onto baking sheet in a single layer.

4. Bake 18 to 20 minutes, or until lightly toasted, stirring halfway through cooking time. Let cool.

5. Mix dried cranberries into nuts; serve immediately, or store in an airtight container until ready to serve.

Recipe from Mr. Food Christmas Made Easy

We had a chance to chat with Tim after his set. Such a nice person and so appreciative of how much we love his music.

Here is Tim, holding his ISITK goody bag, with my son. It was so cool for me to finally give a favorite singer his recipe in person and in actuality.

This is a lovely video about the making of Aunt Martha’s album ‘Norway, ME’. Four songs from the album feature throughout. You get a feel for what a lovely guy Tim is and why this band is so likable.

I adore Portugal. The Man. I’m crazy about Aunt Martha. No surprise that I love this cover.

I’m more convinced than ever that you want to buy Aunt Martha’s music. Shop the band’s Website.

Cheers!

Cheesecake in a Jar. Vanilla With Cherries. Chocolate With Toffee Bits.

Concert tonight!

I am going to see Aunt Martha and Carbon Leaf, two towns over, right here in Vermont.

The truth is I’m seeing Carbon Leaf because I am going to see Aunt Martha.

But, actually I am not seeing Aunt Martha. Instead lead singer Tim Noyes is playing solo.

I CANNOT WAIT!

You might remember me writing about Aunt Martha here or here.

Well, tonight is going to be a first for me.

You know how I usually make a recipe for my favorite singers and bands? Totally a virtual thing.

However, today I made recipes to bring to Tim. For real!

I asked Tim what kind of food he likes and he replied that he liked literally everything.

I figured something portable would definitely be in order. And easy to eat in case he has to drive home to New Hampshire tonight.

And, of course, something really delicious.

So I made a variety of desserts in jars and attached inexpensive spoons with elastic wire. I think they are totally adorable. (I’ll post the Zebra dessert tomorrow)

Cheesecake in a Jar

Ingredients:

Crust of choice (Recipes below for Graham and Chocolate)
No Bake Cheesecake (Recipes below for Vanilla and Chocolate)
Toppings of choice
Small mason jars, about 1/2 pint size or smaller

Directions:

1. Prepare crust and cheesecake.

2. Spoon a few spoons of crust into bottom of jar. Spoon cheesecake over.

3. Spoon topping over the cheesecake.

4. Tie a spoon onto the jar with twine or ribbon.

No Bake Vanilla Cheesecake

Ingredients:

8 oz cream cheese
1 can (14 oz) sweetened condensed milk
2 tablespoons lemon juice (or to taste)
1 tsp vanilla
Topping of choice such as cherries or fresh fruit

Ingredients for Graham Crust:

5 Tbs butter, melted
1 1/4 cup graham cracker crumbs
2 Tbs sugar

Directions:

1. Use a mixer to combine the cream cheese, juice and condensed milk until creamy and smooth. Add vanilla.

2. Prepare graham crust by combining all of the ingredients.

Chocolate No Bake Cheesecake

Ingredients:

8 oz cream cheese
1 can (14 oz) sweetened condensed milk
1/2 cup of Hershey’s chocolate syrup
Crushed chocolate toffee bars such as Heath or Skor for topping

Ingredients for chocolate crust:

4 Tbs butter, melted
1 cup of Nabisco Famous Wafers or Oreo cookies, crushed

Directions:

1. Use a mixer to combine cream cheese, syrup and condensed milk until creamy and smooth. Pour onto prepared crust, chill at least three hours.

Recipe from I Am Baker

The cd in the photos is the ‘Bloodshot’ ep. It is amazing. I got it months ago and I still listen to it daily.

‘Bloodshot’ is also the only one of Aunt Martha’s albums that I own that is not in digital form. Makes it much easier to photograph.

Aunt Martha’s latest album ‘Norway, ME’ is a haunting, elegant assembly of music. This song hits me with such force. The lyrics are so real, so devastating.
Aunt Martha-Yellow Dress #2

Check out Aunt Martha on Facebook and the band’s Website where you can buy their music.

If you live here in Vermont or NH, the show is at Tupelo Music Hall in White River Junction at 8 pm. Tickets still available.

Snowman Beef Stew

Yesterday, a friend sent me this video.

I found it very Moooooving.

Those cows made me think of milk, which made me think of these hilarious cakes. (Yes, they really are cakes!)

That is too funny.

So, in keeping with the cow theme: It’s what’s for dinner.

I thought this Snowman Beef Stew was the cutest thing. All those little guys looking up at me as I put them into a hot oven.

Now you understand why they don’t have mouths.

Snowman Beef Stew

Ingredients:

1 pound ground beef
1 package (16 ounces) frozen vegetables for stew, divided (make sure you get the kind that has peas in it)
1 can (10-1/4 ounces) beef gravy
2 cups mashed potatoes (I used the prepared kind that is sold in the refrigerated section. These. They are not at all bad.)
16 whole black peppercorns
1/4 cup ketchup (I put mine in a small squeeze bottle to make it easier to pipe the scarves)

Directions:

1. In a skillet, cook beef over medium heat until no longer pink; drain.

2. Remove 24 peas and one carrot chunk from the stew vegetables; set aside. Add the remaining vegetables to beef. Cook until vegetables are thawed. Add gravy; mix well.

3. Pour into an ungreased 9-in. pie plate. Top with eight mashed potato snowmen, using 1 tablespoon of potatoes for each head and 3 tablespoons for each body. (I used two sizes of ice cream scoops to do this)

4. Bake, uncovered, at 350℉ for 20 minutes. (see note below)

5. Meanwhile, with a sharp knife, cut the reserved carrot into eight strips. Insert one strip into each snowman for a nose. Place three reserved peas on each for buttons. Add peppercorns for eyes. Drizzle ketchup between head and body to form a scarf.

Note: I added the peas, eyes and noses before baking and piped the scarves on when I took the dish out of the oven.

Serves 6

Recipe from Taste Of Home Magazine

As I was adding the scarves to the snowmen I thought of the song White Winter Hymnal.

I love this song, but always thought it was about a bloody injury of some sort.

Popular consensus seems to be that it is just pleasant imagery of a little boy with a red scarf tied around his throat who falls in the snow solely as a vehicle for the lovely harmonies.

As much as I love the Fleet Foxes’ version, I was intrigued by this cover from the band Their Hearts Were Full Of Spring. That musical hum in the background seemed to fit with the song.
Their Hearts Were Full Of Spring-White Winter Hymnal

Speaking of Their Hearts Were Full Of Spring, evidentally they were never here. You just imagined them.

Well, that is what the band’s Website says. Their Hearts Were Full Of Spring may have disappeared, but you can still check out their music on Myspace. You can buy their music on the Market Stall Records Website.

Cheers!

Enchilada-Style Chicken Pie

How many Mexicans does it take to screw in a lightbulb?

Juan

I know. I should stick to cooking.

This Enchilada Pie, even the crust, is cooked in the microwave, which I found amazing and convenient.

It is super delicious, too. Juan would like it.

Enchilada-Style Chicken Pie

Ingredients for the crust:

1 (15-ounce) package refrigerated pie crusts
1 egg
1 teaspoon Worcestershire sauce

Ingredients for the filling:

1 cup chopped onions
1 cup cubed, cooked chicken
1 (4 1/2-ounce) can chopped green chilies
3/4 cup sliced ripe olives, drained
1 cup shredded Monterey Jack or Cheddar cheese
1/2 cup milk
3 eggs
1/4 teaspoon cumin
1/8 teaspoon garlic powder
1/8 teaspoon pepper
A few drops of hot pepper sauce

Toppings:

Salsa, sour cream, avocado slices, pickled jalapeño slices, cilantro

Directions:

1. Unroll pie crust into a 9-inch microwave-safe pie pan. Flute edges, if desired. Generously prick crust with fork.

2. In medium bowl, combine 1 egg and Worcestershire sauce; blend well. Brush lightly over pie crust. (Reserve any remaining egg mixture for filling.) Microwave on HIGH for 6 to 8 minutes, rotating pan 1/2 turn every 2 minutes. Crust is done when surface appears dry and flaky.

3. Place onions in small microwave-safe bowl. Cover with microwave-safe plastic wrap. Microwave on HIGH for 3 minutes or until crisp-tender. Drain well.

4. To assemble pie, layer chicken, cooked onions, chiles, olives and cheese in cooked pie shell. In medium bowl, combine milk, 3 eggs, cumin, garlic powder, pepper, hot pepper sauce and any remaining egg mixture; blend well. Pour mixture slowly over cheese.

5. Microwave on HIGH for 8 to 11 minutes or until knife inserted near center comes out clean, rotating pan once halfway through cooking. Let stand 5 minutes before serving. Cut into wedges to serve along with toppings of choice.

Recipe from Pillsbury Best of the Bake-Off Cookbook

Song of the moment. I love the darkness, the cloak of possession, the guitars.

I love that he is going to kill her again.

This is folk/alt-country at its best.

“I’m going to leave you
I’m going to leave you lying dead
When your last breath is gone
I’ll put that gun to my head
And it’s goodbye cruel world.
Goodbye
Hello Devil

And when I see you in hell
Well, well
I’ll kill you again

So baby we can burn burn burn
For all eternity
You and I will always be together”

I served the crumble with cinnamon ice cream. Yum.

Short song.
The Pains Of Being Pure At Heart-Kurt Cobain's Cardigan

And keeping with the sweater theme, here is a sweet song for the holiday season.

This is a pretty sweet lyric:

“Belly like a lump of gold
Everything you hug, you own.
You own it so well. ”

And how sweet is this part of the song?

“Chanukah or a wreath (oh ho)
We spend the holidays together (oh ho)
We can all overeat (oh ho)
At our holiday dinners forever

Forever…Forever…”

Contrast Podcast Festive 50 Shortlist 2011

While you are narrowing down your votes, make this wonderful dinner. (If you have been stopping by here for awhile, you know my top 10 is going to be pretty predictable).

Back to this fast, fun dinner.

Sausage is so good covered in cheese and mustard and baked up in dough. The onion side is the perfect accompaniment.

Sausage Pasties with Sticky Onions

Ingredients:

200g pack bread mix (I used one can of Pillsbury Crescent Rolls)
8 sausages
1 Tbs grainy mustard
1 egg, beaten
1 Tbs olive oil
3 red onions, cut into wedges
2 Tbs brown sugar
2 Tbs red wine vinegar
4 Tbs grated cheddar cheese

Directions:

1. Make the bread mix following pack instructions. Roll out the dough and cut into 4 diamond shapes measuring 12cm each side (you may need to re-roll the excess to make the final one. If you are using crescent rolls, unroll them onto a work surface).

2. Heat a large non-stick pan. Brown the sausages quickly, remove and set aside.

3. Heat oven to 400℉/200C/180C fan/gas 6.

4. Spread the mustard over each diamond and scatter over the cheese. Lay 2 sausages in the middle, then fold up the bottom point and bring the two side points across. Press to seal, then brush with egg and transfer to a baking tray lined with parchment. Leave to puff up for 5-10 mins (not necessary with crescent rolls) then cook for 15-20 mins until golden.

5. While the pasties are baking, tip out most of the fat from the pan you cooked the sausages in, then fry the onions for 10 mins until starting to soften and caramelise. Tip in the sugar and vinegar and cook for 10 mins more.

6. Serve the pasties with the sticky onions and ketchup, or more mustard if you like.

I had not thought about what music I was going to play today until I picked up yesterday’s NYT to finish up the Arts & Leisure section. The Playlist column by Jon Pareles included Atlas Sound, who have a new album out ‘Parallex’.

Pareles used such descriptions as “songs that strum and muse”, “voices often doubled and staggered to dizzying stereo effect”, “thick electronic fog” and “ambient burble”.

Here is a video for Te Amo from ‘Parallex’. It’s quite nice. I cannot wait to use “ambient burble” in some future review of my own.

Here is an older song by Atlas Sound. I have always liked it.
