Man, that is a lot of recipes…and ridiculous photos and videos! And a lot of music.
I decided to celebrate today with The Amends blasting on the stereo. They were one of the first bands to get in touch with me after I started ISITK and they have been very supportive ever since.
I also happen to know that two members of the band enjoy Midwestern style comfort food.
Well, comfort food is exactly what this Cheeseburger And Fries Casserole is.
I realize that I just had burgers on the blog last week, but this recipe couldn’t be more different.
You can glam up your plate a bit with ketchup squiggles….or not. The casserole is wicked good no matter how you serve it up.
Cheeseburger And Fries Casserole
Ingredients:
2 pounds ground beef
1 small onion, chopped
1 can cream of mushroom soup
2 cups shredded cheddar cheese
1 – 20 ounce pkg of frozen french fries (I used two different types to finish up some opened packages in my freezer)
Ketchup, to serve
Directions:
1. In a skillet, brown beef with onion, salt and pepper to taste. Drain.
2. Stir in mushroom soup and cheese.
3. Pour into a greased 9 x 13 baking dish and arrange french fries on top.
4. Bake uncovered at 350℉ for 45 minutes or until the fries are golden brown.

The Amends, who I wrote about last summer in this post, have a new EP out.
Signal is a tight EP crammed with hard rocking guitar, solid lyrics and plenty of bluesy moments.
My favorite song is the softest of the bunch with its insistent rhythms and lovely vocals. I am all over those “Oooohs”. Totally addictive.
Check out The Amends on their Website and on Facebook. You can buy the music on the Bandcamp page.
Cheers!
