Seriously, they are Monster Cookies.

Every time I lifted a cookie, I would think “What a monster!”. Every bite: “Whoa! These are totally monster cookies.”

They are so monster I had to weigh one.

Delicious chocolate chip cookies filled with a caramel chocolate candy. These are incredible.

I don’t have a deep dish cookie pan, but a Wilton Cookie Pop Pan worked great. I experimented with a tart pan, too, but that was too small. The cookies were still really good, because chocolate chip cookies with salted caramel candy can’t be anything but!

I can’t find my photos of the inside of the cookies….maybe I ate them. There are plenty of good shots for you to have a look at over at the website where I got the recipe.

Monster Deep Dish Chocolate Chip Caramel Cookies

Ingredients:

¾ cup butter, softened
¾ cup brown sugar
¼ cup white sugar
1 egg
2 tsp vanilla extract
2 cups flour
1 tsp baking soda
2 tsp cornstarch
½ tsp salt
1 cup semi-sweet chocolate chips
12 Ghiradelli Dark & Sea Salt Caramel Chocolate Squares, unwrapped
Special Equipment: Round Pops Cookie Pan, muffin top pan or deep dish cookie pan

Directions:

1. Preheat oven to 350℉.

2. Grease cookie pan.

3. In a medium bowl, whisk together the flour, baking soda, cornstarch and salt.

4. In a large bowl with an electric mixer, beat together the butter and sugars until creamy, about a minute. Beat in the egg and vanilla to combine.

5. Gradually add flour mixture to the butter mixture, beating well. Once dough has come together, stir in the chocolate chips.

6. Press a tablespoonful of dough into the bottom of prepared pans. Top with a chocolate square. Top the candy with an additional tablespoonful of dough and gently press to cover and enclose the candy.

7. Bake the cookies for 12-15 minutes or until the centers are set and the edges are golden and lightly crisped. Allow the cookies to cool in the pan about 5 minutes before removing to wire racks to cool completely. (A butter knife works well to loosen the cookies from the pan.)

Note: This recipe can be made without a deep dish cookie pan. Just drop heaping tablespoonfuls of dough 3 inches apart on a parchment lined cookie sheet.

Makes 12 Monster Cookies
