Bánh Mì Hot Dogs. Salt And Pepper Fries With Onion And Jalapeño.

Q: Where does the president keep his armies?
A: In his sleevies.

And that is because I am flat out of hot dog jokes.

This is probably one of the best dinners I have made in recent times. Grilled hot dogs get the Bánh Mì treatment with ham, pickled vegetables and spicy mayo. On the side are seasoned waffle fries topped with a simple sauté of garlic, onions and jalapeño that is so much more delicious than it sounds.

Bánh Mì Hot Dogs

Ingredients:

2 Tbs fresh lime juice
1 Tbs fish sauce
2 tsp sugar
1 1/2 tsp minced fresh ginger
2 cups halved and thinly sliced English cucumber
1 cup julienned carrots
1/2 cup fresh cilantro leaves
1/4 cup julienned radishes
1/2 cup mayonnaise
2 Tbs chili garlic sauce
8 oz deli-sliced ham, wrapped in aluminum foil
4 jumbo hot dogs
4 hot dog buns

Directions:

1. Preheat grill to medium. Brush grill grate with oil.

2. Make the salad: Whisk together lime juice, fish sauce, sugar, and ginger; toss with cucumber, carrots, cilantro, and radishes.

3. Make sauce: Whisk together mayonnaise and chili garlic sauce.

4. Grill ham packet and hot dogs, covered, turning hot dogs occasionally, 5 minutes.

5. Turn off grill and place buns inside to warm, 1-2 minutes.

6. Line each hot dog bun with a quarter of the ham; top with hot dogs, sauce, and salad.

Ingredients:

1 (22 oz) bag frozen waffle fries
1 1/2 cups sliced red onion
4 cloves garlic, thinly sliced
1 jalapeño, sliced
1 Tbs oil
1/2 tsp sugar
Lime wedges

Directions:

1 Preheat oven to 425℉.

2. Bake fries according to package directions. Season with salt and black pepper halfway through baking. Return fries to oven to finish baking.

3. Sauté onion, garlic and jalapeño in oil in skillet over high heat until onion is crisp tender; season with sugar, salt and pepper.

4. Top fries with onion mixture and serve with lime wedges

There is actually a band from Portland, Oregon called Bánh Mì (although I think they might have disbanded last month). They cite “sammiches” as one of their influences, so maybe they will be inspired by today’s dogs.

I’ve never heard of a Piss Wagon, let alone listened to a song about one. So here we go.
