Easy to make, easy to eat.

Butter enhanced almond paste is sandwiched between puff pastry which is in turn sprinkled with sliced almonds. The squares bake up crisp and tender with the delectable filling making each bite pure joy.

Ingredients:

2 sheets (from a 17.3 oz package) frozen puff pastry (like this brand), thawed in the refrigerator
4 ounces almond paste
1/4 cup butter, softened
Pinch of sea salt
2 tsp sugar
1 egg, beaten
1/2 cup sliced almonds

Directions:

1. Preheat the oven to 400°F.

2. In a small bowl, mix together the almond paste, butter, and sugar and salt. (I found it easiest to use my hands to get it well combined).

3. Unfold the puff pastry and set one sheet aside. Lightly brush one sheet with some of the egg. To yield 9 croissant squares, the dough will be in a 3 x 3-inch grid.

4. Spoon about 1 tablespoon of the almond paste mixture in the center of each square.

5. Lay the second sheet of unfolded puff pastry on top of the prepared first sheet. Use your fingers to firmly press the puff pastry sheets together.

6. Cut the pastry into 9 equal squares. Place, about 2 inches apart, on a parchment paper lined baking sheet.

7. Brush each individual pastry with egg and top with almonds.

8. Bake for 20 to 25 minutes, until puffed and golden.

9. Cool for 10 minutes before serving.
