Hasselback Tomato Caprese is the ultimate summer salad. It makes use of garden fresh tomatoes and fragrant basil at their height of flavor. Put creamy mozzarella and some garlic into the picture and you do this traditional Italian recipe proud with a fun, updated presentation.

Ingredients:

2 cloves garlic, minced
1 Tbs olive oil
4 plum tomatoes
8 ounces fresh mozzarella, sliced
Fresh basil leaves

Directions:

1. In a small skillet, cook garlic in the olive oil for about one minute until golden.

2. Make slices in tomatoes (top to bottom) without slicing all the way through. Season with salt and pepper.

3. Spoon the garlic oil into the openings in the tomatoes, then tuck in the mozzarella slices and basil .
