One of the most popular recipes here at I Sing In The Kitchen is the Insane Oreo Peanut Butter Brownie Cupcakes that I made back in May.
One of my friends commented that she made a mini version of the cupcakes using one mini Oreo. Great idea! And another commenter asked for baking time for the minis, so I thought it would be a great time to try a mini version myself and share it with you all.
I tried two versions of the cupcakes. One had only one Oreo as my friend suggested and the other version I tried with a stack of 2 Oreos.
Both were fantastic. Little bites of total awesomeness.
The minis with one Oreo looked much better as you can see from my photos below. Next time I will probably make more brownie mix and pour more on top of the double stack to make the top more even. This time I just didn’t have enough batter, but I LOVE the added surprise of all that delicious Oreo and Peanut Butter flavor inside. YUM!
Oh, and another thing. Some of the commenters had problems with the baked cupcake sticking to the liner. Well, I just discovered these amazing parchment liners that confections do not stick to at all. Another bonus is that the cups keep their shape beautifully. I highly recommend using them for these sweet treats and anything else that you think might be prone to sticking.
2. Prepare brownie mix according to package directions.
3. For each insane mini cupcake, spread a small amount of peanut butter over each of 2 Oreo cookies (or just one, if you prefer) and stack them on top of each other. Place Oreo stacks into the lined muffin cups.
4. Spoon brownie batter over each of the stacked Oreos to cover. Bake for 10 minutes, until brownies are cooked through.
5. Let cool completely then serve.
