I know that I just posted a recipe using cookie mix not long ago (Easy Turtle Cups), but I liked the mix enough to try this recipe. It’s from one of those cooking booklets that are on display at the checkout line of the supermarket. I am a sucker for those.

I’m not sure why there is Trouble in the recipe title, because these Crispy Chocolate Chunk Cookies are anything but. Just stir some Cocoa Krispies into the cookie mix along with butter and an egg. That’s it. Crispy, Chocolatety, easy.

Ingredients:
1 pouch (1 lb 1.5 oz) Betty Crocker double chocolate chunk cookie mix
1/2 cup butter, softened
1 egg
1 cup cocoa-flavored rice cereal

Directions:

1. Preheat oven to 375°F.

2. In large bowl, stir cookie mix, softened butter and egg until soft dough forms. Gently stir in cereal.

3. Onto ungreased cookie sheet or a sheet lined with parchment, drop cookie batter by rounded tablespoonfuls about 2 inches apart.

4. Bake 8 to 10 minutes or until edges are set. Cool 1 to 2 minutes; remove from cookie sheets to cooling rack.

Makes about 2 dozen cookies
