Two Ingredient Pancakes?

Yes, really.

Who knew that bananas and egg could fry up into delicious, lighter than air pancakes?

Everyone here really liked these different pancakes. They made terrific crêpes, too, fantastic filled with sliced bananas.

Some advice for the cook: don’t get discouraged when trying to flip the very delicate pancakes. If you approach cooking these guys in the same way as regular pancakes you’ll end up tearing them up. So, make small sized pancakes with ample room between them. Also, try and use a very small spatula to flip, and in no time you will find that you have the hang of it and your pancakes will look as great as they taste.

If your patience gets too tested, just make the crêpes… far easier.

Ingredients:

2 ripe bananas
4 whole eggs
Oil for pan
Sliced bananas and maple syrup, to serve

Directions:

1. Heat a small skillet over medium/low heat.

2. In a blender or food processor mix the bananas and eggs together until smooth.

3. Heat some oil in the skillet. Add a small amount of batter for each pancake. Allow to cook until golden on both sides, about 2 minutes each.

4. Serve with slices of banana and maple syrup.

Makes enough pancakes or crêpes to feed 4 light eaters
