Cheesy Mac & Cheese. De Rosa Playing In My Ears.

So, this evening I am going to have a look at some kittens that a nearby farmer has in his barn.

You think the kitty would like some Macaroni and Cheese?

It would if this was the version.

Stripped down, homey and very simple to make. I loved how crisp the edges were.


Cheesy Mac & Cheese

Ingredients:

1 pound penne pasta, cooked according to package directions
6 Tbs butter
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups Monterey Jack cheese
2 1/2 cups milk

Directions:

1. Grease a 13 x 9 inch baking dish and preheat oven to 400℉.

2. Soon half of the pasta into the baking dish. Top with pats of butter and 3/4 cup of each cheese. Repeat to make another layer of pasta, butter and cheese.

3. Pour in milk until the dish is about 1/3 full of milk. Bake for 30 minutes, uncovered.

Serves 6 to 8

    This looks so good. Will have to make it for the grands at Christmas!

    • I think they will like it as this version of mac/cheese is particularly kid friendly. The crispiness from the milk bubbling up into the cheese and butter especially appeals to the older folks. It was so good.

    Good luck looking at kittens….remember, they are soooo cute as kittens, but still grow up to be cats. And, they can live for years! I should know!

    • Thanks, Ann. I grew up in a house full of cats, so I sort of know the drill. I will admit that I am nervous about the commitment. However, I am really going out of my mind with all of the mice. A cat might not be the solution, but I don’t think it can hurt.

      I’ll keep you posted!
