I love Caprese salads. Especially in summer when you can get perfectly ripe tomatoes and mounds of basil. I’m also mad for fresh mozzarella.
Well, when a friend wrote about a recipe for a Caprese style salad using Burrata I knew I had to try it. Burrata is a buttery mozzarella filled with cream. I had never even heard of it until I read about it in Lisa’s post here.
Having just made this, I have to say that I think I prefer my mozzarella without cream inside. But my husband loved the Burrata. So I strongly suggest giving it a try. Burrata has a lot of fans out there.
Burrata Mozzarella Salad with Tomatoes and Fresh Thyme
3 ripe tomatoes
2 balls of Burrata mozzarella
Several sprigs fresh thyme
Extra virgin olive oil
Coarse sea salt and freshly ground pepper
1. Slice the tomatoes and Burrata mozzarella into generous rounds and alternate on a plate.
2. Drizzle olive oil over tomato and cheese. Sprinkle with fresh thyme leaves, salt and pepper. Mound basil in center.

This Mortal Coil-My Father
I hate to say it, since so much of This Mortal Coil’s music is incredibly lovely, but I wish Alison Limerick’s vocals were worthy of the lyrics. Maybe Adrienne Barbeau did it better. (Remember her??). I don’t know, I never heard her version.
But, I do know Judy Collins’ version. Gorgeous. She wrote the song and it really is hard to imagine improving upon it. Makes me want to hug my father right now.

The burrata is new, this is the first year they have sold it–it’s hard to find! I live it, but so hard to slice…good thing I have my new special soft cheese slicing knife. Your salad looks excellent. (But that’s basil.)
