Anyone who has spent some time in my kitchen knows how much I love candy eyes. Eye really do. When I am using candy eyes in a recipe, I try to bake and decorate first thing in the morning. That way I have “friends” in the kitchen to talk to the rest of the day until my children get home from school. I particularly loved singing to these Cookie Monsters. Om nom nom. They are so easy to make. In no time you can have a bunch to keep you company in your kitchen.
Cookie Monster Cupcakes
Ingredients:
Your favorite cupcake recipe (If you want to up the cookie ante, you can use the recipe posted here.)
Your favorite icing (have double quantity on hand so you can mound it on for the head)
Blue Sanding Sugar (I use AmeriColor brand)
Mini Chips Ahoy cookies
Candy Eyes (1/2″ size) (You can order them here. Get some 1/4″ ones, too. We’ll definitely use them in future recipes)
Directions:
1. Bake Cupcakes.
2. Mound frosting on cupcake. Dip into a bowl of the blue sanding sugar. Stick on two eyes. Push a cookie in.
That’s it. Definitely something to sing about.
