Eggy Bacon Toasts


You know we MUST start this post with this:

Love Kevin Bacon. But, Oh Ho…love bacon.

This is an easy breakfast to put together. It takes no time at all, yet feels kind of elegant due to the french toast like toasts. Topped with bacon. Yum.

Eggy Bacon Toasts

Ingredients:

3 eggs, beaten
1 Tbs milk
Salt and pepper
Pinch of cayenne pepper
1/2 baguette, thickly sliced into 8 pieces
225g streaky bacon rashers
12g butter

Directions:

1. Place eggs, milk, salt, pepper and cayenne into a large shallow dish. Mix together.

2. Add baguette slices to egg mix and allow to absorb, turning over after a few minutes.

3. Place the bacon under a broiler and grill until crispy and golden. (you can do this in a skillet, too.)

4. Heat butter in a large frying pan and add baguette slices. Cook for 2-3 minutes on each side until golden brown.

Serves 4
