Posh Fish Fillet Sandwiches

Seen recently through my lens:

My son made this for me in woodworking class since I am a total GG freak.

My son got this guy at the Tunbridge fair. He was a happy presence in our family room until he deflated a few weeks ago.

Sigh. My son was at his job when the store was robbed.

He and his coworker were honored by our town as ‘Unintended Heroes’ for their calm demeanor during the robbery.

We saw twenty one pilots again. Amazing!

We waited in snow/sleet for 3 hours to watch the Patriot’s Super Bowl Parade in Boston.

I ran into April at a silent auction.

I hosted a Steve Jobs’ themed dinner fundraiser for our town’s library. It was iFun.

Also fun are these Posh Fish Fillet Sandwiches. They had me at posh.


Posh Fish Fillet Sandwiches

Ingredients:

Breaded frozen fish fillets (I used these)
Brioche-style buns 2, toasted
50g Arugula
1 shallot, minced
1 Tbs capers
6 cornichons, chopped
¼ tsp Dijon mustard
4 Tbs mayonnaise
½ lemon

Directions:

1. To make the sauce, mix together all of the ingredients (except fish) with a squeeze of lemon and season to taste with salt and pepper.

2. Bake the fish fillets following the package instructions.

3. Spread the bottom of the buns with half the sauce then top with the arugula. Place a cooked fish fillet on top with the rest of the sauce and the bun tops.

Serves 2 (doubles easily)
