Yes, come together my friends for some mighty fun and tasty Beef And Cheddar Hand Pies. Puff pastry bakes up all crispy and golden around the seasoned ground beef and cheese filling. Perfect for a picnic or dinner alfresco.
Ingredients:
1 pound ground beef
2 cloves garlic, minced
1 large onion, halved and thinly sliced
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
Coarse salt and freshly ground pepper
6 ounces cheddar cheese, shredded
1 (12 ounce) sheet frozen puff pastry, thawed
Flour, for dusting
1 large egg, lightly beaten
Roasted broccolini or other green vegetable, for serving
Directions:
1. Heat a large skillet over high heat. Add beef, garlic, and onion. Cook, stirring occasionally, until beef starts to brown, about 7 minutes. Stir in Worcestershire and Dijon. Season with salt and pepper. Remove from heat and cool completely. Stir in cheese.
2. Preheat oven to 425℉.
3. Roll out pastry on a lightly floured surface to a 14-inch square. Cut into four 7-inch squares. Spoon a quarter of beef mixture on each square. Brush edges with egg, then fold one corner of each pie over, forming a triangle. Press edges to seal.
4. Place pies on a parchment-lined baking sheet. Brush tops with more egg. Cut 2 vents in each top. Freeze 10 minutes.
5. Bake until golden brown, about 20 minutes. Serve with broccolini.

Salt Lake City-based band L’anarchiste have their debut album ‘Giant’ out later this month. They only have one song available for streaming on Bandcamp which sounds quite good. Today’s song isn’t from the new album, though. It’s from the 2013 EP ‘The Traveler’ and it is one of my favorite songs by the band. Ominous as it spirals into a delicious build-up.
“And there the feeling goes again away from me”
Check out L’anarchiste on the band’s Website, where you can learn of upcoming shows in Utah and buy their music.
Cheers!
