What a fun idea.
Line muffin tins with wonton wrappers, fill with some taco seasoned beef and beans, then top with cheese. Repeat. Bake.
What you get are portable little taco treats with a nice crisp shell. Top with your favorite taco accompaniments and dig in.

Ingredients:
1 pound lean ground beef
1 (1 ounce) packet taco seasoning
2/3 cup water
1 can (15 oz) black beans, drained and rinsed
2 cups shredded cheddar cheese
36 wonton wrappers
Taco toppings such as salsa, sour cream, and/or cilantro
Directions:
1. Preheat oven to 375℉.
2. Brown the ground beef in a large skillet over medium-high heat. Drain.
3. Stir in taco seasoning, water and black beans. Bring mixture to a boil, and then reduce heat to low. Let simmer for 10 minutes, or until water is absorbed.
4. Grease 18 regular muffin cups. Place one wonton wrapper in each muffin cup. Divide half of the meat mixture between muffin cups. Sprinkle half of the cheese over the meat. Repeat layers with another wonton wrapper, taco meat and cheese.
5. Bake for 15-18 minutes, or until cheese is bubbly and wrappers are golden brown. Serve with your favorite taco toppings.
