Here’s a quick one-skillet supper that combines sausage, diced tomatoes, white beans and gnocchi all topped with Parmesan and gooey mozzarella.
1 tablespoon olive oil
1 lb Italian sausage, casings removed
1 medium onion, chopped
2 garlic cloves, minced
16 ounces potato gnocchi
1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
6 ounces fresh baby spinach
1/4 teaspoon pepper
1/2 cup shredded mozzarella cheese
3 tablespoons grated Parmesan cheese
Shaved Parmesan, to garnish
1. In a large skillet, heat oil over medium-high heat. Add sausage and onion; cook until onion is tender and sausage is browned. Add garlic; cook 1 minute longer.
2. Add gnocchi; cook and stir 5-6 minutes or until golden brown. Stir in beans, tomatoes, spinach and pepper; heat through.
3. Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted. Garnish with shaved Parmesan.
