Cooking pasta in the slow cooker always makes me a bit nervous. I’ve had some gloppy messes in the past that I still shudder at the thought of.

Nothing to shudder about with this ultra simple Slow Cooker Ravioli. With only 5 minutes of prep, it is a busy night’s dream dinner.

I haven’t had beef ravioli in ages since I prefer cheese stuffed, but I think the beef filling probably held up better with slow cooking than cheese typically does.

The red bell pepper flavor was really pronounced here, so if you are not a huge fan, you might want to omit it. I think I will next time.

My particular slow cooker keeps the food really hot on the keep warm setting. I find it really improves the food if I unplug it 1/2 hour before serving (meaning no over-cooking or sometimes scorching around the sides). For the ravioli, I unplugged the cooker, added the cheese, and let it melt in with the power off.

Ingredients:

1 (25 ounce) bag beef ravioli
1 (26 ounce) jar pasta sauce
1 (8 ounce) can tomato sauce
1 red bell pepper, diced
Italian seasoning, to taste
1 1/2 cups shredded mozzarella cheese
Shredded Parmesan and chopped basil to serve, if you like

Directions:

1. Pour half of the pasta sauce into the bottom of the slow cooker.

2. Add the frozen ravioli and pour the remaining pasta sauce and tomato sauce over the ravioli.

3. Top with red bell pepper and Italian seasoning to taste. Mix well and cover.

4. Cook on low for 4 hours. During the last 20 minutes of cooking, top with mozzarella cheese and cook until it has melted.

Serves 6

Remember The Fixx?

A new wave fixxture (Ha!) in the 1980s, they had all sorts of catchy hits.

They have a new album out, ‘Beautiful Friction’, and are playing tonight here in Vermont. So, of course I am going to go and check them out.

I think this may be my favorite older song by The Fixx. I have the album, but I’m going to share the video ‘cuz hits like this usually come with a take down slap.

Here is a live version of the title track from the new album. This was filmed in January, so I bet this will be what I’m getting tonight. I hope he leaves the egg in his hotel room.
