Orzo is one of my favorite pastas. Add in shrimp, goat cheese and a mix of vegetables and you’ve got a quick, easy, light and delicious dinner.
Shimp, With Vegetables, Goat Cheese And Orzo
Ingredients:
1 cup orzo
Extra-virgin olive oil
2 cloves garlic, minced
1 red pepper, sliced
2 cups spinach
10 grape tomatoes, halved
15 medium shrimp, peeled and deveined
3 oz goat cheese
Directions:
1. Cook orzo as directed on package.
2. Heat oil in skillet. Add garlic and cook for 30 seconds. Add peppers, spinach and tomatoes. Cook about 2-4 minutes until vegetables are soft. Add in shrimp and continue to cook until shrimp is pink and cooked through. Once shrimp is cooked, add goat cheese to the skillet and stir until melted.
3. Top cooked orzo with shrimp mixture and serve immediately.
Serves 2 (Easily doubled or tripled)
