Short And Sweet. Macadamia Nut-Coffee Bean Chocolate Chip Cookies.

I love chocolate covered coffee beans. I have never seen them as a cookie ingredient before, so I jumped right on this recipe.

The recipe calls for a box mix to make the cookies, so it couldn’t be easier to throw together in no time at all.

I especially loved biting into the cookies and all at once getting the hard crunch of the coffee beans, the soft crunch of the nuts and the divine chew of the chocolate chunks.

Winners.

Macadamia Nut-Coffee Bean Chocolate Chip Cookies

Ingredients:

1 package (17-1/2 ounces) double chocolate chunk cookie mix (like this one)
1 egg
1/4 cup vegetable oil
2 tablespoons water
1-1/2 cups chocolate-covered coffee beans, finely chopped (Best to do this in the food processor. My beans were rolling all over the cutting board and onto the counter when I tried to chop them with a knife.)
1 cup macadamia nuts, chopped

Directions:

1. In a large bowl, beat the cookie mix, egg, oil and water until blended. Stir in coffee beans and nuts.

2. Drop by tablespoonfuls 2 inches apart onto parchment lined baking sheets. Bake at 375°F for 8-10 minutes or until set. Remove to wire racks to cool. Store in an airtight container.

Makes about 2 1/2 dozen cookies
