My music hosting site is still experiencing difficulty, so no music today. But, a really delicious dessert can almost make up for the silence. Happy Friday!
Salted Caramel Bars
Ingredients:
10 Tbs butter, melted
1/2 cup sugar
1/2 tsp salt
1 egg yolk
1 2/3 cup flour
Caramel Topping (recipe follows)
Sea salt flakes
Directions:
1. Preheat oven 350 F. Line a 9×9 pan with parchment allowing the edges to hang over the opposite sides.
2. In a bowl, stir together the butter, sugar and salt. Whisk in the yolk and flour. Transfer dough to pan and press evenly into the bottom, building up edges slightly. Prick all over with a fork and freeze for about 10 minutes to firm up. Bake until light brown, about 25 minutes.
3. Prepare Caramel Topping: In a small saucepan combine 1/2 cup butter, 1/2 cup light brown sugar, 6 Tbs light corn syrup, 1 tsp salt, 2 Tbs sugar and 2 Tbs heavy cream. Cook over medium heat until sugar is dissolved. Bring to a boil. Once mixture bubbles stir constantly until thickened, about 5 minutes. Remove from heat and stir in 1/2 tsp vanilla.
4. Pour caramel topping onto shortbread. Cool in pan for 2 hours. Lift from pan using parchment and transfer to a cutting board. Cut into squares and top with sea salt flakes.
If you like the caramel/sea salt thing then you will love these bars. I could have eaten the whole tray myself!!

I’m really bummed out about the host problems. Their “Cloud Storage Platform” is the issue and a “minority” of users are affected. Guess that would be me.
We all know that you have far too much self control to eat a whole tray yourself. The same does not apply to your husband and children.
It is in my best interest to salt the desserts because then the children won’t touch them.
so, do you pronounce it car-mel or car-a mel…..
I personally say car-a-mel, but I believe that both pronunciations are correct. I grew up with Carvel ice cream, so ‘carmel’ sounds wrong to me…. as if someone is mispronouncing the ice cream store. (You know me…flight of ideas and all).
