You can whip up this profoundly flavorful dip in no time at all. Sweet sun-dried tomatoes fleck a chunky, warm mixture of lemony-spiced beans. Easy and delicious.
White Bean Dip With Sun-Dried Tomatoes
Ingredients:
2 (15-ounce) cans white kidney beans (cannellini beans), drained and rinsed
2 Tbs fresh lemon juice
1 cup sliced green onions
3 cloves garlic, chopped
1 Tbs olive oil
1/4 cup sun-dried tomatoes, finely chopped
1/4 cup water
1/2 tsp oregano
1/2 teaspoon ground cumin
1/2 teaspoon salt
Hot pepper sauce, to taste
Crackers, to serve
Directions:
1. Place 1 can of the beans and lemon juice in the bowl of a food processor fitted with the metal blade. Process until nearly smooth.
2. In a large skillet, cook green onions and garlic in hot oil over medium heat until just tender. Stir in puréed beans, the remaining whole beans, the dried tomatoes, water, oregano, cumin salt and hot sauce. Heat through.
3. Serve white bean dip with crackers.
I HATE the saying “It is what it is”. That, to me, is the ultimate bullshit phrase.
I almost didn’t play this song because it touches on that line in the lyrics. It is otherwise such a tortured, painfully beautiful tune that sharing it triumphed over my personal phrase pet peeve.
