Yesterday, I hosted my 30th children’s birthday party.
Having four children will necessitate this kind of claim to fame.
Anyway, it was all good fun. And there was cake!
I’ll post more on the cake soon, but for today I am sharing this really good recipe for Chocolate Walnut Squares. I LOVE the frosting.
Chocolate Walnut Squares
1 cup butter, softened
2 cups sugar
4 eggs
1 Tbs vanilla
2 cups flour
1/2 tsp salt
2 cups chopped walnuts
2 oz unsweetened chocolate, melted
Ingredients for frosting:
5 Tbs flour
1 cup milk
1 cup butter, softened
1 cup confectioners’ sugar
2 tsp vanilla
Directions:
1. Cream butter and sugar. Beat in eggs and vanilla. Add flour and salt. Fold in walnuts. Spread half of batter into a greased 13×9 inch baking pan.
2. Add chocolate to the remaining batter. Mix well and carefully spread over batter in the pan.
3. Bake at 350℉ for 30 minutes or until a tester comes out clean.
4. For frosting, whisk together flour and milk in a saucepan. Cook and stir over medium heat until a thick paste forms, about 10 minutes. Cool completely. In a mixing bowl cream the butter and confectioners’ sugar. Add vanilla. Gradually add the milk mixture. Beat for 5 minutes (I really loved this frosting)
5. Frost cake. Cut into squares and store in the refrigerator.
