For all of you Buffalo lovers out there, have I got a dreamy pasta dish for you. A quick sauté of chicken is coated in a thick, creamy, spicy and tangy sauce then tossed with fettuccine. Extra crumbled blue cheese and a sprinkle of cilantro ensures that there is plenty of flavor in every bite. If you want to increase the heat, drizzle with some more hot sauce before serving.
Buffalo Chicken And Blue Cheese Fettuccine Alfredo
Ingredients:
1 lb fettuccine pasta
4 tablespoons butter
1/2 onion, diced
3 cloves garlic, minced
1 1/4 lb boneless skinless chicken breasts, cut into bite sized pieces
3/4 cup Frank’s Red Hot Sauce
1 1/4 cup low fat sour cream
1/3 cup blue cheese crumbles, plus more for garnish
Freshly ground pepper, to taste
3 tablespoons chopped cilantro
Directions:
1. Cook pasta according to package directions. Drain and set aside.
2. In a large skillet, melt butter over medium heat. Sauté onions and garlic until tender, about 5 minutes. Add chicken and stir until cooked through.
3. Add hot sauce, sour cream and blue cheese to the skillet. Stir until smooth and warmed through. Add the fettuccine and toss to coat.
4. Season with pepper. Sprinkle with blue cheese crumbles and cilantro.
Serves 4-6

I think I would swap out the Blue Cheese for some Ranch but it looks awesome!
You’ll have to let me know how the recipe turns out using Ranch. Sounds like a good substitute!
