Here’s another insanely quick and easy dinner. It’s perfect for a light, warm weather meal.
Just heat up some cooked chicken with sesame dressing then set it atop a warm coleslaw-rice pilaf mixture. (The original recipe uses couscous, but I accidentally picked up a box of rice pilaf that was packaged the same. It was a delicious mistake.) The crunch and salty sweetness of the honey roasted peanuts really make this dish super good.
1 (6 oz) box rice pilaf mix (or 1 (10 oz) box couscous)
1 tablespoon olive oil
2 cups coleslaw mix
4 green onions, sliced
2 tablespoons plus 1/2 cup reduced-fat Asian toasted sesame salad dressing, divided
2 cups shredded cooked chicken breast
2 tablespoons minced fresh cilantro
Chopped honey roasted peanuts
1. Prepare rice pilaf (or couscous) according to package directions.
2. Meanwhile, in a large nonstick skillet, heat oil over medium heat. Add coleslaw mix; cook and stir 3 minutes or just until tender. Add green onions, 2 tablespoons dressing and rice pilaf; heat through.
3.In another skillet, add chicken and remaining dressing; cook and stir over medium heat until heated through.
4. Serve chicken over coleslaw mixture. Top with cilantro and peanuts.
