Apricots Stuffed With Basil Goat Cheese And Marcona Almonds. And A Proper Love Song.

So, today is my 19th wedding anniversary.

Hard to believe given that I find it hard to think I can possibly be old enough to have been married that long.

Thankfully, nothing dramatic happened at my wedding. Some of these wedding mishaps are pretty funny to watch.

I’ve mentioned before that I went to Spain on my honeymoon, so here’s a recipe with Spanish Marcona almonds.

I adore Marcona almonds. They are roasted in olive oil, sprinkled with sea salt and have a softer texture and sweeter flavor than regular almonds.

These appetizers are fun and different. The contrast in flavors and textures is all at once unexpected and fantastic. Crunchy, soft, creamy, cheesy, nutty, sweet and salty.


Apricots Stuffed With Basil Goat Cheese And Marcona Almonds

Ingredients:

4 ounces goat cheese, at room temperature
2 teaspoons milk
2 tablespoons finely chopped basil
40 dried apricots
40 Marcona almonds
2 teaspoons honey

Directions:

1. Mix together cheese, milk, and basil with a wooden spoon until spreadable. Thin with additional milk, if necessary.

2. Pipe, or spoon, some of the cheese mixture on each apricot and top with an almond. Drizzle with honey.

Makes 40

The Apricots can be served in any serving tray.

But, look so festive in the tasting spoons.

Anniversaries deserve A Proper Love Song. The song has an underlying tone that is a bit unsettling, but these lyrics are anything but.
