Mini Pancakes. Rubblebucket On The Stereo.

Did you read about that giant crocodile that Guinness World Records declared the largest saltwater crocodile in captivity in the world?




Finally, this video.

I cannot believe I made it through the whole 2 minutes. It was like a car wreck, I just couldn’t stop watching.

I sincerely hope you can get that chorus out of your head and move on with your day.

So, from crocodiles we move onto these adorable tiny pancakes.

You might remember that I have these cute tasting spoons that I could not resist buying. I’m always looking for recipe ideas to fill them with. Mini Pancakes were just the thing. Topped with a touch of butter and a splash of maple syrup, they were terrific.

These little pancakes taste really good even when they are not hot.

I used the same pancake batter recipe as from the Strawberry Cheesecake Pancakes, without the cheesecake, just because it was so good.


Mini Pancakes

Ingredients:

1 1/4 cups all-purpose flour
1 1/4 cups buttermilk
1 large egg
1/4 cup vegetable oil
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt

Directions:

1. Preheat the oven to 200℉.

3. Pulse the flour, buttermilk, egg, vegetable oil, granulated sugar, baking powder, baking soda and salt in a blender until smooth.

4. Coat a large nonstick skillet or griddle with cooking spray and place over medium heat. Working in batches, pour about 1/2 tablespoon of batter into the skillet for each pancake. Cook until bubbly on top, about 1 minute, then flip and cook until the other side is golden brown, less than a minute.

Makes a boatload of mini pancakes.


If you don’t have little spoons, you can always arrange the pancakes on a platter or use to make a happy plate.

Rubblebucket is the band of the day. This Brooklyn based band with a Vermont connection has captured my full attention.

Big sound, solid beats and the belting vocals of front woman Kalmia Traver make for music magic.

I was mindlessly bouncing around to Came Out Of A Lady for many listens before I realized that this awesome song has very funny lyrics. I mean, really, “I came out of a lady.” Yes, many of us did.
