Looking for something different to add some life to your usual salads?
This recipe will do the trick.
I was intrigued at the thought of cheese and peaches and pecans in a salad together.
The combination is a winner. Even zombies will die for it.
Arugula, Peach, and Cheddar Salad
Ingredients:
1/4 cup pecans
3 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
kosher salt and black pepper
2 bunches arugula (6 cups)
1 peach, sliced
2 ounces sharp white Cheddar, cut into chunks
Directions:
1. Heat oven to 350°F.
2. On a rimmed baking sheet, toast the pecans, tossing once, until fragrant, 4 to 5 minutes; let cool, then chop.
3. In a large bowl, whisk together the oil, vinegar, mustard, honey, ¼ teaspoon salt, and ⅛ teaspoon pepper. Add the arugula, peach, cheddar, and pecans and toss to coat.
Serves 4

Benny Henning-The Meadow
Holy internet Search! It is nearly impossible to find out anything about this singer. Worse still, I got the song in February, but cannot for the life of me remember whom or where from.
I just spent over a half hour searching for information on Benny Henning and all I know is that The Meadow is from the 2008 album ‘Introducing Benny Henning.” Finally found it listed here, but not available for purchase.
