Maple Apple Pancake

Dress up breakfast with this fast and delicious skillet bake.

Maple Apple Pancake

Ingredients:

4 eggs
1/2 cup flour
1/2 cup heavy cream
1/2 cup maple syrup (Vermont, of course)
1 tsp salt
3 tbs butter
3 Granny Smith apples, thinly sliced
cinnamon sugar
confectioners’ sugar

Directions:

1. Heat oven to 425℉.

2. Combine eggs, flour, cream, syrup and salt in a blender. Blend to combine.

3. Melt butter in a 12 inch nonstick. oven-safe skillet. Saute apple slices until soft, about 5 minutes. Blend batter again, until frothy, about 30 seconds.

4. Pour batter into skillet, let sit on heat for a few seconds and then transfer to oven. Bake until puffed and golden, about 12 minutes.

5. Serve in wedges sprinkled with cinnamon sugar, dusted with confectioners sugar and drizzled with syrup.

I’m not sure what it is about Sparrow And The Workshop that makes me keep coming back for more. Jill O’Sullivan’s voice is not my usual cup of tea. But, at the same time, her sound is compelling and makes me take notice.

I find them so completely likeable just hearing them talk, that it made me enjoy their music even more. Funny how things work out that way.
