Whoever snuck the ‘S’ into Fast Food …well played!
You might want to remember that when you taste these incredible Crispy Chocolate Peanut Butter Cups. So fast to make and then there they all shouting at you “EAT ME!”
I am telling you that it took all of my restraint not to spoon the crispy peanut butter filling into my mouth instead of into the cups. It is that dangerous of a dessert.
1 1/4 cups smooth peanut butter
1/4 cup butter, softened
1 cup confectioners’ sugar
1 teaspoon vanilla extract
1 1/2 cups crispy rice cereal
1 3/4 cups semi-sweet chocolate chips
1. Preheat oven to 350℉.
2. Grease mini muffin cups with non-stick spray and add a tablespoon chocolate chips into each cup. (Be sure to thoroughly grease the cups. I had trouble releasing some of them later on. Non-stick cookware or silicon might be the way to go.)
3. Melt in the oven for 5 minutes. With the back of a spoon, smooth out the top of the chocolate chips while they’re still warm. Set aside. (The chocolate could also be melted in a microwave and then spooned into the cups. I might do that next time, as all of my chocolate chips did not melt completely in the oven. It was no big deal since the finished candy still tasted amazing.)
4. In a large bowl, cream together peanut butter and butter until smooth. Add in powdered sugar and vanilla, then mix until combined. (I did this in the food processor.) Pour in crispy rice cereal and mix again until combined.
5. Drop heaping tablespoons of the peanut butter mixture into each mini muffin cup. Smooth with the back of a spoon and refrigerate for at least 15 minutes before eating. Store in an airtight container in the fridge.
