Short And Sweet. Buckeye Bars.

As a self-professed music snob, I thought this was pretty funny.

This is one of my favorite T-Shirts.

This is one of the best desserts I have made.

I love Buckeyes, those sweet balls of peanut butter covered in a crisp chocolate coating. I have a really good recipe for those which I will share in the future, but today I’m offering up this really easy variation.

The only thing that isn’t short about this dessert is waiting the two hours for it to chill.

Buckeye Bars

Ingredients:

1/2 cup butter, softened
3/4 cup crunchy peanut butter
22 Nilla Wafers, crushed (about 3/4 cup)
2 cups confectioners’ sugar
1/2 of 8 oz tub Cool Whip whipped topping (Do not thaw)
3 oz semi-sweet chocolate

Directions:

1. Line an 8-inch square pan with foil, with ends of foil extending over sides.

2. Beat butter and peanut butter with mixer until blended. Add wafer crumbs; mix well. Gradually beat in sugar. Press into bottom of pan.

3. Microwave Cool Whip and chocolate in microwaveable bowl on HIGH 1 minute; stir. Microwave 30 seconds longer, or until chocolate is melted; stir until well blended. Spread over peanut butter layer.

4. Refrigerate 2 hours. Use foil handles to lift dessert from pan before cutting to serve.
