Avocado Coconut Toast. New Music From Marsicans.

Me, and much of the internet, continue to be obsessed with Avocado Toast. My favorite “recipe”, if you can call it that, is this one here.

But everyone is going on and on about coconut oil. (Here are 101 uses for it.) The only time I used some was when I made Homemade Magic Shell/Crackly Ice Cream Topping. Then I saw this recipe for Avocado Coconut Toast which called for a slathering of coconut oil.

I love the elegance of the sliced avocado and the subtle flavors of the coconut and lemon. Breakfast of champions!

Avocado Coconut Toast

Ingredients:

4 slices whole-grain bread
2 teaspoons coconut oil
1 avocado, thinly sliced
Salt
Red-pepper flakes
A squeeze of lemon

Directions:

1. Toast bread slices.

2. Spread each slice of toast with coconut oil.

3. Top with avocado then season with salt and red-pepper flakes. Finish with a squeeze of lemon.

Serves 4

Leeds-based Marsicans have a new song out that sounds like it is all sunshine, but not so much..

“Gone In A Second” was written by lead vocalist James Newbigging after 2 of his grandparents died within 2 weeks of each other. The song is an important reminder to be thankful for the good things we have right now while we have them.

“It’s such a shame that it takes something sad
to make us come together”
