Shake up your nachos with this fun recipe. Swap tater tots for tortilla chips and pile on your favorite toppings. Go ahead and invite Darth Potato Head over for dinner, but I suspect he spurns spuds.

Ingredients:

4 cups frozen Tater Tots
1 pound ground beef
1 (1 oz) envelope reduced-sodium taco seasoning
2/3 cup water
1/2 cup shredded cheddar cheese
2 cups shredded lettuce
1/4 cup sliced ripe olives
1/4 cup taco sauce or salsa
1/2 cup sour cream

Directions:

1. Bake Tater Tots according to package directions.

2. Meanwhile, in a large skillet, cook beef until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water. Bring to a boil. Cook and stir until thickened.

3. To serve, top Tater Tots with beef mixture, cheese, lettuce and olives. Serve with taco sauce and sour cream.
