Every time I have a mango, I wonder why I don’t eat them more often. A perfectly ripe, juicy mango is just pure fruit heaven.
The merry mango features in this eclectic salad that combines the sweet fruit with buttery avocado, peppery arugula, marinated onion, and a bite of chile all tossed with a bright, orange vinaigrette. Different and delicious.
Mango, Avocado And Arugula Salad
Ingredients for salad:
6 cups arugula leaves
1 mango, peeled and cut into long slices
1 avocado, peeled and sliced
½ red onion, sliced
1 Tbs lime juice
Ingredients for Spicy Orange Vinaigrette:
1 Tbs champagne vinegar
4 Tbs orange juice
2 Tbs lime juice, about ½ lime
4 Tbs olive oil
½ tsp cumin
2 Tbs finely chopped cilantro
1 red chili or hot pepper, sliced (next time I will definitely use the red chili for the added pop of color)
Salt and pepper
Directions:
1. Combine all ingredients for the salad dressing in a jar, cover with lid and shake until the ingredients are well mixed.
2. Soak the onion slices in warm water with a dash of salt and 1 Tbs lime juice for about 10 minutes. Rinse and drain the onion.
3. Toss the arugula leaves with half of the vinaigrette.
4. Add the avocado slices, mango slices and onion slices to the arugula mix, drizzle the remaining vinaigrette on top. Serve.

Arugula is fast becoming one of all time favorite salad greens. Finding a ripe mango can be a chore, but boy howdy its worth it. The last time I was in Hawaii, it was mango season. There were sun ripened mangos just laying on the ground everywhere. It was totally a fantasy come true. Wonderful salad.
