Shrimp Margaritaville


Shrimp get the margarita treatment in this fun recipe.

Just marinate shrimp for an hour in, well, basically a garlicky cumin scented margarita. Grill and serve. That’s it.

For a change from rice, I served the shrimp over some marinated giant white beans.

1/4 cup Triple Sec
1/4 cup Tequila

1 teaspoon grated lime rind

1/4 cup fresh lime juice

2 teaspoons cumin

1/2 teaspoon
1/8 teaspoon cayenne

3 garlic cloves, minced

1 lb medium shrimp, deveined
Bamboo or metal skewers (soak the bamboo ones before using)


1. Mix first 8 ingredients in a shallow dish. Add shrimp. Marinate for one hour.

2. Place shrimp on skewers and grill until pink and cooked through. Serve with beans or over Spanish Rice.
