Twice with peekaboo videos this week. When it rains it pours.
Earlier this month I needed to make a portable snack for some hungry baseball players. Enter these easy Chocolate Chip Muffins.
The muffins start with a box of cake mix that gets doctored up with some vanilla yogurt. The outside bakes to a delicate crust, while the inside is moist and tender.
Ingredients:
1 (18.25 ounce) box yellow cake mix
2 tablespoons flour
1 cup vanilla low fat yogurt
1/2 cup vegetable oil
1/2 cup water
3 eggs
1 cup miniature semisweet chocolate chips
Directions:
1. Preheat oven to 375℉. Grease 22 muffin pan cups.
2. Mix all ingredients together. Fold in chocolate chips.
3. Spoon batter 3/4 of the way up prepared muffin cups.
4. Bake for approximately 20 minutes, until golden. Cool in pan for 5 minutes then gently remove and cool on wire rack 20 minutes longer.
