Be sure to use Up Beets in this fun salad that mixes sweet beets, creamy goat cheese, crunchy walnuts and tender greens with balsamic vinaigrette. Lovely as a light lunch or alongside grilled meat or vegetables.
Beet Salad With Goat Cheese And Walnuts
Ingredients:
Mixed baby salad greens
Prepared balsamic vinaigrette salad dressing
4 cooked beets, chopped (I used some from a jar)
Snipped flat-leaf parsley
1/2 teaspoon ground black pepper
1/2 cup crumbled goat cheese
1/4 cup chopped walnuts, toasted
Directions:
1. Place salad greens in a large salad bowl. Drizzle with some of the dressing; toss to coat. Set aside.
2. In a medium bowl, combine beets, basil, and pepper. Drizzle with some of the dressing; toss to coat.
3. To serve, arrange greens and beet mixture on serving plates. Sprinkle with cheese and walnuts. Drizzle with additional dressing, if desired.
Serves 6 to 8
