These easy Key Lime Parfaits almost scream summer. Cool lime cream layered with crunchy graham crumbs makes for a great do ahead dessert.
Ingredients:
2 (8oz) pkgs cream cheese, softened
1 cup sweetened condensed milk
1/2 cup bottled Key lime juice
3 cups frozen nondairy whipped topping, thawed (such as Cool Whip)
2 cups graham cracker crumbs
2 tablespoons melted butter
1/4 cup sugar
Garnish: More graham cracker crumbs and sliced lime
Directions:
1) In a large bowl, beat cream cheese at medium-high speed with an electric mixer until fluffy. Add sweetened condensed milk and Key lime juice, beating at medium speed until smooth. Fold in whipped topping. Cover and refrigerate for a few hours.
2) Preheat oven to 350℉.
3) In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Spread in a thin layer on a rimmed baking sheet.
4) Bake until lightly golden, 7 to 10 minutes. Let cool completely on pan.
5) In the bottom of 8 (9-oz) parfait glasses or plastic cups, place 2 tablespoons graham cracker mixture. Top with Key lime mixture. Repeat layers, topping with additional graham cracker crumbs and lime wedge if desired.
