My neighbor raises chickens and lucky me received a carton of her eggs.

So, what to do with these beautiful eggs?
I always forget how much I love Egg In A Hole. It is the perfect breakfast…Buttery bread and a runny egg. Yum. Almost silly to post a recipe for it, but I wanted to remind you of this easy morning meal.
You can also take it up a notch and turn your egg in a hole into a robot like I did in this post. While you are over there, check out the recipe for Maple Candied Bacon. Some slices of those would be mighty fine with your eggs.
Ingredients:
Bread, sliced
Butter
Egg
Salt and pepper
Directions:
1. With a biscuit cutter or sharp knife, cut a hole in the center of the slice of bread.
2. Melt a tablespoon of butter in a skillet over medium-low heat. Place the bread in the skillet and crack the egg straight into the center of hole. Throw the little hole in the skillet, too, to soak up any extra butter.
3. Sprinkle the egg with salt and pepper to taste. After about a minute, when the white starts to set up, flip bread and egg over with a spatula and cook briefly so the yolk stays runny.
‘Hairball Shimmy’ is the kind of freaking weird song one is likely to find when trying to pair a tune with eggs.
Grandpa Egg released an album in 2011 titled “Songs For My Cat”. No doubt hairballs would make it into the tribute.
‘Hairball Shimmy’ is about the day singer Jeb Morris’ cat coughed up a hairball and looked like he was dancing.
As I said, freaking weird, but flippin’ great.
