I’d like to raise my glass to all of you and thank you for making it so much fun to blather on about food and music every day. I can’t tell you how much I enjoy this happy little place in my life where all I have to worry about is what to cook and whose music I should listen to while clamoring around in the kitchen.

To celebrate, I thought a festive umbrella topped tropical punch would be just the thing. Pineapple Rum Punch takes no time at all to mix up and can be made a few hours ahead of time and left to chill in the fridge.

Pineapple Rum Punch
Pineapple Rum Punch

Ingredients:

3-1/2 cups unsweetened pineapple juice
1-1/2 cups orange juice
1 cup coconut water
1 cup coconut rum
1 cup orange peach mango juice
1 cup dark rum
1/4 cup Key lime juice
3 tablespoons Campari liqueur or grenadine syrup

Directions:

1. In a pitcher, combine all ingredients. Serve over ice.

Serves 12

    Wow 1000! Congrats. You are one amazing lady (but then I’ve always known that). This lovely looking cocktail makes me think of where I was last week at this time (Bermuda – where they love their rum!)
