Looking for a fast, easy and incredibly good dinner?
Look no further than these delicious Turkey Verde Lettuce Wraps.
Sauté seasoned strips of turkey, add salsa verde and serve up in romaine leaves. I served mine with some low fat sour cream and sprigs of cilantro to layer on the turkey. To round out the dinner, I made a big kale salad with lots of chopped vegetables. I’ll post that soon.
2 1/2 lbs turkey breast cutlets, cut into 1-inch strips
4 teaspoons olive oil
1 teaspoon garlic salt
1/4 teaspoon pepper
1 cup salsa verde
12 romaine leaves
Low fat sour cream and cilantro leaves to serve, if you like
1. In a large bowl, combine turkey, oil, garlic salt and pepper.
2. Heat a large skillet over medium-high heat. Add turkey mixture in batches; cook and stir 2-4 minutes or until no longer pink.
3. Return all turkey to pan. Stir in salsa; heat through. Serve in romaine leaves.
