My notes to myself about this recipe for Slow Cooker BBQ Pork And Potatoes were “If you really love BBQ sauce, you will love this a lot.”
I love BBQ sauce, so obviously I loved the recipe.
I also love that it takes less than 10 minutes to prep. Easy and delicious.
Slow Cooker BBQ Pork And Potatoes
Ingredients:
6 medium russet potatoes [about 1 ¾ pounds], peeled and chopped into bite sized pieces
2 pounds boneless pork loin, cut into one inch cubes
1 teaspoon dry mustard
2 cups of your favorite prepared barbeque sauce
Salt and freshly ground pepper
Chopped watercress or parsley, to garnish if you like (I liked the pop of color and bite from the chopped watercress)
Directions:
1. Place the potatoes in a 4 to 5 quart slow cooker; top with the pork.
2. Stir the mustard into 1 cup of the barbeque sauce. Spoon evenly over the pork and potatoes.
3. Cover the pot and cook on low setting for 8 hours, or until the potatoes and pork are tender. Stir in the remaining barbeque sauce. Season with salt and pepper to taste.
