Saw this and made me steel myself for this weekend’s quick visit to see my Dad in NYC. So true.
I am always blown away when a recipe with as few ingredients as this Tamale Pie can come out so freakin’ delicious.
Well, of course if those ingredients include corn chips, chili, cheddar cheese and hominy, then there really should be no surprise.
Just 4 ingredients and a prep time of 5 minutes. That’s it. This is truly a “Dinner in 30 minutes” guarantee.
So easy you should make 2 and share one with a friend.
Ingredients:
1 can (15.5 ounces) white hominy
3 cups of corn chips (Fritos), lightly crushed
2 cans (15 ounces each) chili with beans
1 cup shredded cheddar cheese
Optional: Sour cream, cilantro, avocado, tomato and shredded lettuce to serve.
Directions:
1. Combine the hominy, with its liquid, and the corn chips in a 9 inch round glass or 2 quart ceramic baking dish. Top with the chili and spread to cover the corn and hominy.
2. Bake at 400℉ for 20 minutes.
3. Top with shredded cheddar and bake for an additional 5 minutes.
Serves 6
