This is a ridiculously easy recipe to throw together. Humble ingredients that come together to make a comforting meal. The stuffing crisps up in the oven and you get the added crunch from the water chestnuts.

Ingredients:

1 package (6 ounces) instant chicken-flavored stuffing mix
2 cups frozen mixed vegetables, thawed
1 can (10-3/4 ounces) condensed cream of chicken soup
1 can (8 ounces) sliced water chestnuts, drained
1 cup shredded cooked chicken

Directions:

1. Prepare the stuffing mix according to package directions; set aside.

2. In a large bowl, combine the mixed vegetables, soup and water chestnuts.

3. Transfer vegetable mixture to a 2 quart baking dish. Top with the chicken and prepared stuffing.

4. Bake, uncovered, at 350°F for 30 minutes or until heated through.

I’m loving this rockabillyish tune from Spectrals.

And this more twangy, solemn song is the title track for the new album due out next month. Louis Jones says himself “this might be the best song I’ve written”.

Check out Spectrals on the band’s Website, where you can link to buy their music. Learn about upcoming UK tour dates on Facebook.

Cheers!
