When it comes to desserts, I love them all. The simple tart, a cookie bursting with chocolate chunks, any kind of ice cream, a slab of cake, a creamy custard, an adorable cupcake piled high with icing, a homey fruit crisp, a slice of pie.
But, it’s the crazy good looking desserts that really steal my heart. I’ll see a photo and without realizing it, be talking to it. Then I’m singing it a love song as I prepare the recipe and hope that it tastes as good as it looks.
I added the ‘Insane’ to the title of these Oreo Peanut Butter Brownie Cupcakes, because they are CRAZY! Crazy delicious and Crazy fun when you cut into one and see that Oreo/Peanut Butter/Brownie layering.
Who thinks of these things? I mean, slathering peanut butter over Oreos and covering them with some brownie batter? Wow! I love you creative bakers out there.
I used a double chocolate brownie mix, so there were also chocolate chunks in the brownie layer. Insane.
Insane Oreo Peanut Butter Brownie Cupcakes
Ingredients:
1 box (18 oz) brownie mix (I love Ghiradelli’s Double Chocolate Brownie Mix)
36 Oreo cookies
1/2 cup (about) creamy peanut butter
Directions:
1. Preheat oven to 350℉ and line 18 cups of a muffin pan with paper liners.
2. Prepare brownie mix according to package directions.
3. For each insane cupcake, spread 1 teaspoon of peanut butter over each of 2 Oreo cookies and stack them on top of each other. Place Oreo stacks into the lined muffin cups.
4. Spoon 2 tablespoons of brownie batter over each of the stacked Oreos. Bake for 20 minutes, until brownies are cooked through.
5. Let cool completely then serve.
Makes 12 servings

As I was assembling the cupcakes, I thought “If Peanut Butter is good, Nutella should be, too.”
Oh yes, Nutella was REALLY good.
I used a different color liner for the Nutella cupcakes so that I could tell them apart from the PB ones.
‘No Selfish Heart’ by Rick Redbeard was released this January. If you haven’t heard any of his music yet, I highly recommend you get listening. The songs are earnest and insanely lovely with ace lyrics. Sparse instrumentation let Rick’s vocals and the occasional harmonies shine.

Hi ..I just made these insanely awesome cupnies (cupcake brownies??). FYI…the only problem I had was that the cupcake wrapper stuck to the bottom of the bottom oreo :( Figured maybe one should spray the bottom wrapper with a little Pam next time? Thanks for the great recipe – with a little tweaking, will make again.

I didn’t have that problem at all. Maybe it is partly due to the brand of liner? I used these.
I know I will be making this recipe again, so I will try with different liners and also experiment with lightly greasing some of them.

We also made a “mini” version with mini Oreos (just one Oreo), mini liners and mini muffin pan. Very fun! We have made many of your desserts and I love the ones with the brownie mix included. Thank you again, I did bake them for 10 minutes and they were delish! I used reynolds mini liners and they did stick :(. Thankfully they were still a big hit :)

I’ve made this recipe once (found on another site) but I loved the idea of making minis to send to my SO at work for Valentine’s Day tomorrow and came across you site and I’m so glad I did! He loves Nutella and that hadn’t occured to me :) He loved the peanut butter ones I did before, but I’ll be making little mini Nutella cupnies to send him.

I have made with golden oreos because my daughter doesn’t like a lot of chocolate, I have also made with heads and tails oreos and the other day I made some with the limited edition rice krispie oreos, all delicious by the way. Sometimes mine stick to wrappers and sometimes they don’t but worth eating a little bit of wrapper. I haven’t tried them with Nutella yet but I am going to have to because my mother in law would love them, she loves when I make chocolate croissants with nutella. I have even made them with only one oreo to get more out of the recipe so I could hand them out at the holidays with my cookies and not have to make a million of them. This is the best recipe ever. I don’t really eat junk food but I have a hard time resisting these but I do have to say my one downfall is oreos. I just love them. I make oreo cookie balls and they are hard to resist also. Thanks for sharing this great recipe. It has become a great hit with my family and coworkers.

I would loove to make this for christmas! Can you tell me if the cookie remains crisp or becomes soft like cake?
The cookie does remain crisp for at least two days after making. I’m not sure after that because ours were long gone by then!
