Fettuccine With Caramelized Onions, Bacon And Olives. PSY And Why? Are In The Kitchen.

Am I the last person on the planet to have heard of Gangnam Style? Has my head been in Scotland too long?

Well, let me tell you, I want to learn that dance. If only to just jump into the kitchen and scare the bejeezus out of my kids.

Caramelized onions are so good. Especially when they are slowly cooked in bacon grease. Meltingly tender, the onions are perfectly matched with the salty olives and smokey bacon. A perfect pasta dish for a cooler September night.

Fettuccine With Caramelized Onions, Bacon And Olives

Ingredients:

6 strips bacon, cut into 1/2″ pieces
4 Tbs olive oil
1 onions, quartered and cut into thin lengthwise strips
1 garlic clove, minced
1/4 cup pitted and chopped imported black olives, such as Kalamata
1 lb fettuccine or linguine
2 Tbs chopped parsley
Coarsely ground black pepper
Grated Parmesan cheese

Directions:

1. Cook the bacon in a medium skillet until partially browned; drain off most of the fat.

2. Add the olive oil; heat over low heat; add the onion; sauté until soft and edges begin to turn golden, about 8 minutes. Add the garlic; sauté 1 minute. Stir in the olives.

3. Meanwhile, cook the pasta in boiling salted water according to package directions. Drain. Toss with the onion and bacon sauce and parsley. Sprinkle with pepper and grated cheese.

Why?

Why? Indeed!

I don’t dig rap or hip hop, but this song leans more towards just being one with verses of spoken words. The background synth is wicked 80s and the hook is perfect (sung) pop.

Why? will follow up the August 14th release of their ‘Sod In The Seed’ EP with their fifth full-length album ‘Mumps, etc.’, due out on October 8th.

Check out Why? on Facebook, where upcoming world tour dates are listed. Visit the band’s Website, where you can buy the music.

Cheers!

Never heard of gangman style, guess I’m not the cool mom I thought I was! LOL Dish looks delicious, what would you suggest ast a substitute for olives since not everyone in my family likes them?

    • Glad I am not the only one late to the PSY party!

You could leave the olives out altogether, or maybe substitute capers, sun-dried tomatoes or pickled jalapeños. Even a cup of baby spinach added would be nice.

  2. Rick Beyer says:

Oh, this looks awesome. Olives, bacon, & pasta with carmelized onions? You might as well just rub me in butter and throw me in the skillet – I am so there! :)

  3. Cooking Gangnam style – did you wear a bowtie? ;)

    • Rick Beyer says:

You left glitter off the list of ingredients!

    • Most definitely. ;-)

I’m also thinking of getting me a yellow suit and tennies. Then put on some dark glasses and get cooking. No horses allowed in the kitchen, though.
