Grilled Veg And Goat Cheese Couscous With Lemon-Butter Chicken. Fun Fitz And The Tantrums.

I wanted to find the scene from the movie ‘Julie & Julia’ where Meryl Streep bites into her sole and rapturously utters “Butter”.

Couldn’t. But this clip, from the same scene, is so great.

If you haven’t watched ‘Julie & Julia’, definitely do. Meryl Streep is incredible. I liked the book, too.

The reason for all of that is because the grilled chicken swimming in lemon butter is just amazing. The butter oozes into the meat and every bite is moist and buttery. The grilled veg couscous is the perfect side. Lots of flavors at play in this menu.


Grilled Veg And Goat Cheese Couscous With Lemon-Butter Chicken

Lemon-Butter Chicken

Ingredients:

4 boneless, skinless chicken breasts
3 Tbs unsalted butter, melted
1 Tbs each minced fresh lemon zest, lemon juice and chopped fresh parsley

Directions:

1. Preheat grill to medium-high and brush grill grate with oil.

2. Season chicken with salt and pepper; grill, covered, about 5 minutes per side.

Have some wine while you are waiting.

3. Whisk together butter, zest, lemon juice and parsley in a bowl. Season butter with salt and pepper. Brush butter on chicken before serving and serve the remaining sauce on the side.

Grilled Veg And Goat Cheese Couscous

Ingredients:

1 box instant couscous (10 oz)
3 cups sliced zucchini
1 lb asparagus, trimmed
1 small red onion, cut into 1/2-inch-thick slices
4 Tbs olive oil
1 red bell pepper
1 Tbs minced lemon zest
3 Tbs fresh lemon juice
2 cups halved cherry or grape tomatoes
1/2 cup chopped fresh parsley
1/2 cup chopped green onions
3 oz goat cheese, crumbled
Salt and pepper

Directions:

1. Toss zucchini, asparagus, and onion with 2 Tbs oil then season with salt and pepper.

2. Grill vegetables (including bell pepper), covered until charred about 5-6 minutes. Chop vegetables into bite sized pieces.

3. Cook the couscous according to the package directions, with lemon zest added. Set aside.

4. Whisk lemon juice and 2 Tbs olive oil in a large bowl. Add cooked couscous, grilled vegetables, tomatoes, parsley and green onions. Season with salt and pepper to taste. Top couscous with goat cheese and serve with chicken.

  1. I love that film! And they are so right. Butter makes everything taste amazing – the more butter the better :) The lemon butter chicken looks gorgeous – definitely going to give that a try sometime soon!! Katie x
