Don’t say I never taught you anything.
Well, it’s not me doing the teaching here, but the video is very entertaining and informative.
Especially if you go to black tie events all of the time, like I do, and you have to help your man get his tie on.
If you want a dinner that looks and tastes as fancy-schmancy as a bow tie, I’ve got one here.
This is truly a 30 minute meal.
Use your favorite vegetables in the couscous. I had to use up some bell peppers and turnips, but next time I will add some carrots and zucchini for a bigger color punch.
That Lemon Soy Sauce? Divine Dahling.
Grilled Scallops With Lemon Soy Sauce
Ingredients:
1 lb sea scallops
1 Tbs olive oil
Sea salt and cracked black pepper
Ingredients for lemon soy sauce:
2 Tbs lemon juice
2 Tbs soy sauce
1 Tbs chopped parsley or cilantro leaves
Directions:
1. Make the lemon soy sauce: Place ingredients in a small bowl. Stir and set aside.
2. Heat grill.
3. Toss scallops with oil, salt and pepper. Grill about 1 minute per side until cooked through. Serve with sauce.
Roasted Vegetable Couscous Salad
Ingredients:
Assorted vegetables such as zucchini, bell peppers, carrots, etc., chopped
2 tablespoons olive oil
1 (10 ounce) box couscous (1 1/2 cups)
2 1/2 cups boiling water or vegetable stock
1 Tbs butter
1/4 cup (35g) slivered almonds, toasted
Sea salt and cracked black pepper
Ingredients for red wine vinaigrette:
1/4 cup (2 oz) red wine vinegar
2 Tbs olive oil
1 tsp sugar
1 clove garlic, minced
Directions:
1. Preheat oven to 400℉/200℃.
2. Drizzle olive oil on vegetables. Roast in a baking dish for 20 minutes or until tender.
3. Meanwhile, pour boiling water over couscous, add butter and cover.
4. Make dressing: Place ingredients in a bowl and stir to combine.
5. Fluff couscous, add vegetables, almonds and dressing.
Serves 6
