Normally, when I think of anything sweet, healthy is not in my mind. Not one bit. However, I really love this bread. The recipe is from King Arthur Flour’s Whole Grain Baking Cookbook. Exception made because I adore KAF.

Easy Banana Walnut Chocolate Chip Bread

Ingredients:

1/2 cup unsalted butter, softened
1/2 cup light or dark brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
3 ripe bananas
1/4 cup honey
2 eggs
2 cups whole wheat flour
1/4 cup chopped walnuts
1/2 cup chocolate chips

Directions:

1. Preheat oven to 350℉. Lightly grease a 9 x 5 inch loaf pan.

2. Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth.

3. Add flour, nuts and chocolate chips. Spoon the batter into the prepared pan and let it rest at room temperature for 10 minutes.

4. Bake for 50 minutes. Lay a piece of foil across the top, and bake until a tester inserted into the center comes out clean, 10 to 15 minutes longer.

5. Remove bread from the oven and allow to cool for 10 minutes. Turn out of the pan onto a rack and allow to cool completely.

I wanted to pick up The Rip Tide when I was in Portland. No go. The record shop did have the ep, ‘Lon Gisland’. Anyone else originally from the NY area. LonGisand? Maybe?

It’s a wonderful disk, although my daughter was indignant that I had possibly overpaid for so few songs.

I don’t think so. I love every song. I can’t wait until I get my hand on the long playing new album.

All that is important for you is that you have Beirut on your radar. You won’t be sorry.
