Tomato Tart With Three Cheeses


A family of three tomatoes were walking downtown one day when the little baby tomato started lagging behind. The big father tomato walks back to the baby tomato, stomps on her, squashing her into a red paste, and says, “Ketchup!”

It’s that kind of day.

Tomato Tart With Three Cheeses


1 sheet puff pastry, thawed
3/4 cup mozzarella cheese, shredded
3/4 cup provolone, diced
1/4 cup minced basil
2 tomatoes, sliced
1/4 cup shredded Parmesan


1. Roll pastry to about a 12 inch square. Transfer to a parchment lined baking sheet.

2. Sprinkle the mozzarella and provolone over the pastry. Sprinkle with basil. Arrange tomato slices over the cheese. Season with salt and pepper and sprinkle with Parmesan.

3. Bake at 400℉ for about 20 minutes or until the pastry is golden brown. Let cool for 5 minutes then slice and serve.

Makes about 4 servings.

(I doubled the recipe so I could have leftovers for the kids’ lunch…and my breakfast) :)
